Minestrone Soup
1 pkg. bean mix
3 qt. water
1 pkg. herb mix
1 carrot
2/3 c. (4 oz.) chopped lean cooked ham
1 (14 1/2 oz.) can no salt added stewed tomatoes, undrained
1 pkg. macaroni
DIRECTIONS:
Sort and wash bean mix; place in a Dutch oven. Cover with water 2 inches above beans; soak 8 hours. Drain beans. Combine beans, 3 quarts water, herb mix, chopped carrot and ham. Bring to a boil; reduce heat and simmer 2 hours, stirring occasionally. Add tomatoes and macaroni; cook 20 minutes or until macaroni is tender. Yield: 8 servings. (167 calories per 1 cup serving.)
