Lentil Minestrone Soup

INGREDIENTS:

1 med. onion, chopped
1 clove garlic, minced
1 tbsp. oil
1 med. carrot, peeled and sliced
1/4 lb. lentils (2/3 c.)
1/2 of a 10 oz. pkg. frozen chopped spinach
4 c. water
4 tsp. chicken or beef bouillon (granulated)
1 tsp. dried oregano
1 tsp. dried thyme
2 dashes hot pepper sauce
1 (8 oz.) can tomatoes
1/2 box uncooked elbows

DIRECTIONS:

In large saucepan over medium high heat, cook onion and garlic in hot oil, about 5 minutes or until tender, stirring frequently. Add carrots, celery, lentils, spinach, water, bouillon granules, oregano, thyme and hot pepper sauce. Bring to a boil; reduce heat; cover and simmer 15 minutes. Stir in tomatoes and pasta, simmer 10 to 15 minutes longer, or until pasta is tender.

Taco Soup

INGREDIENTS:

2 lbs. ground beef
1 lg. onion, chopped
1 clove garlic, minced
2 cans tomato soup
2 lg. cans vegetable beef soup
3 cans kidney beans, drained
1 pt. taco salsa
2-3 tsp. chili powder
1 tsp. taco seasoning
2 qt. tomato juice
1 qt. water
1 bag tortilla chips
Sour cream
Grated cheese

DIRECTIONS:

Brown ground beef with onion. Add remaining ingredients (all together in large pan). Simmer for approximately 30 minuets. Serve over broken chips. Top with sour cream and grated cheese. Soup can be frozen.

Taco Soup

INGREDIENTS:

2 lb. hamburger meat
1 med. onion, chopped
1 pkg. Hidden Valley dressing mix
1 pkg. Schilling taco seasoning mix
1 can corn (do not drain any cans)
1 can pinto beans
1 (7 oz.) can green chilies, chopped
3 cans Hunt’s peeled tomatoes
20 oz. water

DIRECTIONS:

Brown meat and onion. Drain well. Mix in dressing mix and taco seasoning. Add vegetables — use all juices, add water. Heat and blend thoroughly.
To serve put Fritos in bowl, add soup, and top with grated cheese if desired.

This recipe freezes well. Makes 9 cups.

Taco Beef Soup

INGREDIENTS:

2 lbs. ground meat
1/2 c. chopped onion
3 1/2 c. water
2 (16 oz.) cans tomatoes, chopped
2 (16 oz.) cans kidney beans, undrained
1 env. Lawry’s taco seasoning mix
2 (8 oz.) cans tomato sauce

DIRECTIONS:

Cook meat and onions until brown. Drain off fat. Add water, tomatoes, kidney beans, taco seasoning mix and tomato sauce. Simmer 20 minutes.
Garnish at table with: 1 small avocado, chopped, corn chips, shredded cheddar cheese and sour cream. Serves 8.

INGREDIENTS:

1 lb. ground beef
1/4 c. chopped onion
1 (16 oz.) can tomatoes, with liquid
1 (16 oz.) can kidney beans, with liquid
1 (8 oz.) can tomato sauce
1 pkg. taco seasoning
1 sm. avocado
Garnish: shredded cheddar cheese, sour cream, corn chips

DIRECTIONS:

In pot, brown ground beef and onions; drain. Add tomatoes, kidney beans, corn and tomato sauce and taco seasonings. Cook 15 minutes. Add avocado. Put soup in individual dishes, garnish with cheese, sour cream and corn chips.

INGREDIENTS:

1 (15 oz.) can tomatoes (do not drain)
1 (15 oz.) can corn (do not drain)
1 (15 oz.) can kidney beans (do not drain)
1 (4 oz.) can diced green chilies (do not drain)
1/3 c. taco sauce
1 lb. ground beef, sauteed (drain fat)
4-5 tsp. chili powder
Dash garlic salt
Dash onion salt

DIRECTIONS:

Mix all together. Heat for 5 minutes. Serve with grated cheese. Sour cream and taco chips.

Taco Soup

INGREDIENTS:

1 lg. can (46 oz.) V-8 juice
1 (8 oz.) bottle taco sauce (med. or hot)
3-4 tomatoes, chopped

DIRECTIONS:

Bring to a boil and add 3-4 handsful of Dorito chips. Simmer until thickened. (Doritos will cause it to thicken.) When served add crushed Doritos and or shredded cheese and or a glob of sour cream, on top of bowl of soup. Makes a large pan full of soup.

INGREDIENTS:

1 lb. hamburger
1 can tomatoes
1 can whole kernel corn
2 cans kidney or pinto beans
1 can beef consomme
1 can water
2 pkg. taco seasoning

DIRECTIONS:

Brown 1 pound hamburger; drain grease. Add 1 can tomatoes, chopped and juice, 1 can whole kernel corn and juice, 2 cans kidney or pinto beans and juice, 1 can beef consomme, 1 can water and 2 packages taco seasoning. Mix all together, heat until hot serve over tortilla chips in soup bowl. Top with a little grated Cheddar cheese. Real good! Some times I use ground turkey

INGREDIENTS:

1 lb. hamburger
1 lg. can stewed tomatoes
1 pkg. taco seasoning
Cheese, grated
Sour cream
Olives, sliced
1 (16 oz.) can kidney beans
Tortilla chips
Avocados, diced
Salt & pepper to taste

DIRECTIONS:

Brown hamburger; drain. Add kidney beans, taco seasonings and stewed tomatoes. Bring to boil. Simmer for awhile until warmed through. Pour into individual bowls. Garnish as desired with chips, cheese, sour cream, olives, avocados, etc.

INGREDIENTS:

1 lb. ground beef
1 onion, chopped
2 cans (16 oz.) stewed tomatoes
1 can kidney beans & liquid
1 can whole corn or hominy, drained
1 pkg. Ranch dressing, dry
1 tsp. salt
1/2 tsp. pepper
1 c. water
1 (4 oz.) jar green chilies, sliced
Worcestershire sauce or Tabasco to taste

DIRECTIONS:

Combine all. Simmer 1 hour or longer. May be thinned, if desired. Freezes well.
