Taco Soup

INGREDIENTS:

2 lb. ground beef
1 sm. onion, chopped
1 (4 oz.) can chopped green chile
1 tsp. salt
1 tsp. pepper
1 (1 1/4 oz.) pkg. Taco seasoning
1 can hominy, undrained
3 cans stewed tomatoes, undrained
1 can kidney beans, undrained
1 can pinto beans, undrained
1/2 c. water
1 (1 oz.) pkg. Ranch dressing

DIRECTIONS:

Brown ground beef with onions and green chilies on medium high in large Dutch oven. Stir in remaining ingredients. Bring to a boil. Simmer for 30 minutes. Serve with taco chips.

INGREDIENTS:

2 lb. ground beef
2 pkg. taco mix
3 carrots, sliced
3 potatoes, sliced
3 stalks celery, diced
1 onion, chopped
1 pt. whole tomatoes
1 head cabbage, chopped
3/4 c. rice
2 tsp. oregano
3 tsp. salt
1 tsp. pepper
2-3 qt. water
Parmesan cheese

DIRECTIONS:

Brown hamburger. Add taco mix and 1 1/2 cups water, simmer 1/2 hour. Pour in crock pot or large kettle. Cook on high 1 hour and on low 3 hours, in crock pot. (Simmer in kettle for 2-3 hours.) Pour into mugs and sprinkle with Parmesan cheese.

INGREDIENTS:

2 lbs. hamburger
1 med. onion, diced
2 c. undrained pinto beans
1 c. chili
1 can Rotel tomatoes, chopped
1 c. stewed tomatoes
1 (8 oz.) sour cream
1 lb. Velveeta
Garlic salt or minced onion to taste
1 tsp. salt and pepper

DIRECTIONS:

Brown hamburger meat with onion. Drain. Put in crock pot. Add all other ingredients. Cook slowly until cheese melts. Serve over Fritos.

Taco Beef Soup

INGREDIENTS:

1 lb. ground beef or ground turkey
1/4 c. chopped onion
1 1/2 c. water
1 (16 oz.) can stewed tomatoes
1 (16 oz.) can kidney beans
1 (8 oz.) can tomato sauce
1/2 env. (2 tbsp.) taco seasoning mix
1 sm. avocado peeled, seeded and chopped
Shredded cheese
Shredded lettuce
Corn chips
Sour cream

DIRECTIONS:

In large saucepan cook meat and onion until meat is browned; drain off excess fat. Add water,, r undrained tomatoes, undrained kidney beans, tomato sauce and taco seasoning mix. Simmer, covered, 15 minutes. Pass avocado, lettuce, cheese, corn chips, and sour cream to top each serving. Makes 6 servings.

Creamy Taco Soup

INGREDIENTS:

1 lb. hamburger
1/2 onion
1 (16 oz.) can chili without beans
1 lg. can stewed tomatoes
2 (10 oz.) cans pinto beans
1 (10 oz.) can Rotel tomatoes
1 pt. sour cream
1 lb. Velveeta cheese

DIRECTIONS:

Brown hamburger and onion. Add rest of ingredients. Simmer in crockpot. Serve over Fritos.

INGREDIENTS:

2 lbs. lean ground beef
1 sm. onion
3 cans (4 oz. each) chopped green chilies
1 tsp. salt
1 tsp. pepper
1 can pinto beans, rinsed and drained
1 can lima beans
1 pkg. (1 1/4 oz.) taco seasoning
1 pkg. (1 oz.) Ranch dressing mix
1 can Hominy, drained
3 cans stewed tomatoes
1 can kidney beans

DIRECTIONS:

Fry lean hamburger, drain off fat and put in large pan on stove. Bring to boil and then simmer for 30 minutes. Top with a package of sharp cheddar cheese and serve with taco chips.

INGREDIENTS:

1 lb. hamburger
1 med. onion, chopped
1 lg. can tomatoes, chopped
3 to 4 c. water
1 sm. pkg. (not box) frozen mixed vegetables
8 oz. jar picante sauce
1 tsp. chili powder
1 tsp. cumin
1 tsp. paprika
Salt and pepper to taste

DIRECTIONS:

Brown the hamburger and onion together; drain. Add all other ingredients and simmer until done. Serve with tortilla chips.

INGREDIENTS:

1 lb. ground beef
1 onion, chopped
1 1/2 c. water
1 (16 oz.) can stewed tomatoes
1 (16 oz.) can chili beans
1 (8 oz.) can tomato sauce
2 tbsp. taco seasoning mix

DIRECTIONS:

Brown ground beef and onions. Drain off fat. Combine water, stewed tomatoes, chili beans, tomato sauce, taco seasoning mix. Add to meat mixture. Simmer in a large kettle for 1/2 hour. Pour into bowls and garnish with the toppings.

TOPPINGS:

Sour cream
Corn chips
Avocado chunks
Shredded cheese

INGREDIENTS:

1 lb. ground turkey or beef
1 lg. onion
1 pkg. El Paso taco seasoning mix
1 (15 oz.) can kidney beans, undrained
1 (15 oz.) can peeled tomatoes
1 (8 oz.) can tomato sauce
1 (12 oz.) can whole kernel corn

DIRECTIONS:

Brown turkey, onion and taco seasoning and mix together. Add kidney beans, tomatoes, tomato sauce, and whole corn. Simmer 15 minutes. Add 1/4 cup or more picante sauce.

Jeffrey’s Taco Soup

INGREDIENTS:

1 lb. hamburger
1 lg. onion, chopped
2 cloves garlic, crushed
1 (16 oz.) can whole tomatoes
1 c. celery, chopped
2 tsp. salt
1 tbsp. sugar
1 tbsp. jalapeno peppers, diced or to taste
1 (15 oz.) can kidney beans, drained
2 env. Lawry’s taco seasoning

DIRECTIONS:

Cook hamburger, onion, and garlic in saucepan, until light brown. Stir in tomatoes and juice, celery, taco seasoning, salt, an sugar. Bring to a boil. Simmer 1 hour. Stir in beans and jalapenos. Simmer another 15 minutes.
Garnish with corn chips, shredded cheddar, sour cream, and black olives. Makes 5 (1 cup) servings.
